Made Friends With Eggplant yet? Try an Eggplant Burger!

Mom, Dad and baby Eggplant burger

Seriously! Try this great burger recipe from Alissa at Connoisseurus Veg: Maple Dijon Eggplant Burger

This lady, Alissa, offers a free e-cookbook on her site that has incredible recipes for 9 different veggie burgers (and a very colorful dinosaur presiding over all). I don’t see how anyone could stick with the old animal meat burgers after trying any of these wonderful, imaginative and delicious sandwiches. All of them have actual nutrients to offer and none of the cholesterol and saturated fats and other detriments that come with beef, pork or chicken. And they are easy and straightforward to make with common ingredients you won’t have to search for.

So what are you waiting for? It’s time for a little eggplant heaven! Go to the Connoisseurus Veg website homepage, and click on the large icon on the right hand side for the free downloadable Veggie Burger E-Cookbook. You will find the Maple Dijon Eggplant Burger recipe listed there. There are also recipes for burgers made out of mushroom, Tempeh, Sweet potato and more.

The only thing I would do differently from Alissa’s recipe is I would add lemon juice where she suggests adding salt to cure the eggplant slices before cooking. But try whatever method works best for you.

And while we’re at it, let’s take a look at the benefits of eggplant. There’s a lot more to it than you’d think! Such a lovely vegetable…
