This lady, Alissa, offers a free e-cookbook on her site that has incredible recipes for 9 different veggie burgers (and a very colorful dinosaur presiding over all). I don’t see how anyone could stick with the old animal meat burgers after trying any of these wonderful, imaginative and delicious sandwiches. All of them have actual nutrients to offer and none of the cholesterol and saturated fats and other detriments that come with beef, pork or chicken. And they are easy and straightforward to make with common ingredients you won’t have to search for.

The only thing I would do differently from Alissa’s recipe is I would add lemon juice where she suggests adding salt to cure the eggplant slices before cooking. But try whatever method works best for you.
